I had this fabulous wine at Jak’s Grill in Seattle. They were offering it as a special. It had a big, bold fruity start, then a great spicy taste. I was surprised it didn’t linger a bit longer, the finish was a bit abrupt. All in all, I liked it so much I had to find out more about it. I love the flavor & the price. It’s going on my list of keepers.

Here’s what’s in it: Australian Shiraz. Combining the regional flavours of grapes from McLaren Vale, Langhorne Creek and Padthaway.

What type of wine is your favorite? I prefer reds, absolutely. Give me a good glass of Pinot or Cabernet and I’m a happy camper. While in Hawaii last week, I tasted three different reds while at Sergio’s in Honolulu… the Pinot, the Cabernet and a nice Chianti. They were all definitely – red!

A Pinot wine comes from grapes that are grown around the world, mostly in the cooler regions, but the grape is chiefly associated with the Burgundy region of France. It is widely considered to produce some of the finest wines in the world, but is a difficult variety to cultivate and transform into wine.

Cabernet Sauvignon makes the most dependable candidate for aging, more often improving into a truly great wine than any other single varietal. With age, its distinctive black currant aroma can develop bouquet nuances of cedar or violets.

Chianti is a red Italian wine produced in Tuscany. Chianti is sometimes called the “Bordeaux of Italy”. The flexibility in the blending recipe for Chianti accounts for some of the variability in styles among Chiantis. Lighter bodied styles will generally have a higher proportion of white grape varieties blended in, while Chiantis that have only red grape varieties will be fuller and richer.

How many of you knew any of those things about the different types of wine I tasted? It goes to show that you learn something new every day! There is a lot of work that goes into making an excellent bottle of wine… and there are many methods of smelling, tasting and simply experiencing wine, as well.

For me – it’s all about how smoothly it goes down. What do you look for in a good wine? What qualities are important to you? Is it the smell… the texture… or simply the taste? What’s your favorite type and/or brand?

If you’ve never been to Sergio’s Honolulu, you’re definitely missing out. Located at the beautiful Hilton Hawaiian Village, Sergio’s has authentic Italian food. They have an amazing selection of wine, as well! I ate until I felt I would explode. Hey – I’m Italian, remember? The food was amazing. The atmosphere was relaxed and quiet, and the various wines were quite tasty.

Wine tasting is an art for some people. They have very specific routines they go through prior to even sipping the wine. Once they take that sip, there are even more routines to follow before they actually swallow the wine. I don’t follow such a rigorous method… I just want to taste the wine already! Do you drink wine? Do you just open the bottle and drink it… or do you have to go through a routine to taste it?

There are four stages to wine tasting:

The appearance of the wine – how it looks.
How does it smell in the glass?
What sensations does it produce when held in your mouth?
What finish – or aftertaste – does it have?

These four things combine to establish the properties of a wine, such as the complexity, character and suitability for drinking.

I still don’t think I need to go through all of that. My method works just fine.

There are four main types of wines: red, white, blush and dessert. Let’s look at the breakdown of these four types, and their sub-types:

Red Wines

Cabernet Sauvignon tends to be firmer and more tannic than the other varieties.
Merlot tends to be softer and less tannic than Cabernet. Each of these wines will have aromas and flavors which are somewhat reminiscent of blackcurrant, spice, oak (vanilla), herbs, and even cedar and/or leather in some examples.
Pinot Noir is much less consistent than either of the two wines above. At its best, it can be the most delightfully complex and exotic of wines, filled with heady aromas and flavors of spice, smoke, and red fruit (raspberry, cherry, plum). However, Pinot Noir does not usually show well at lower- or mid-levels on the price spectrum.
Zinfandel is a real delight. It is best known in its somewhat tepid incarnation as a blush wine, the ever-popular White Zinfandel. Its real character, however, is only revealed in its full, rich, red self. It can range in style from a Cabernet-like wine with blackcurrant and oak character, to a big, brambly wine with flavors and aromas of peppery blackberry, herbs, and smoke.

White Wines

Chardonnay is the great grape of the white Burgundies of France. It is also the grape of many expensive (and highly oaked) California wines. It is also one of the wines of choice for the Power Yuppie.
Sauvignon Blanc is the grape of white Bordeaux wines. These wines can reach a soft, nutty, almost honeyed quality when they are mature. These wines can also be unpleasantly grassy, tart, and/or flatly and insipidly dull and flavorless.
Gewurztraminer and Riesling are most famous in German/Alsatian wines, but since I have very little experience with German wine, I will restrict myself to some brief comments on the American wines which are made from these grapes. These grapes are generally turned into semi-sweet wines with a floral and/or spicy perfume and hints of honeyed-peach, pear, and tropical fruit in the flavors. They are generally good “next steps” for those who have cut their wine teeth on White Zinfandel; they provide some of the same sweet approachability as does the infamous blush wine while also providing a bit more in the way of flavors and food compatibility.

Blush Wines range from those huge jugs of Carlo Rossi, Paul Masson, and Gallo (which are sweet, possessed of a disturbing aftertaste or undertone which suggests something rotten and decaying, and IMHO entirely undrinkable—have a beer instead) to the Beringer White Zinfandels of the world. In other words, the range is from awful to acceptable. These wines make good picnic fare (burgers and hot dogs, the same sort of thing you might have a cola with), but they generally do not go well with dinner, being too sweet to complement even the spiciest food.

Dessert Wines consist mainly of port and sherry. Both are a very sweet type of wine, and widely available.
