<p>Over the weekend, I attended the <a href="http://www.biteofseattle.com/home/default.aspx">Bite of Seattle</a> with my friend <a href="http://www.twitter.com/michellegamboa">Michelle</a>. One of the vendors, <a href="http://www.yelp.com/biz/espis-sausage-and-tocino-co-seattle">Espis</a>, featured <a href="http://asiarecipe.com/phidesserts.html#bitsu">Cascaron</a> as a dessert. Once I had tried them, found how yummy they were, and realized the connotations&#8230; you know I had to go back for more!</p>
<p>Cascaron is a sweet dessert made of fried mochi rice and covered in brown sugar. It&#8217;s also very popular in Hawaii. Michelle has eaten it many times, and has only ever seen it served the way you see in the video &#8211; on a stick. </p>
<p>I admit it&#8230; the balls were totally delicious!</p>

<li>Chitlins  &#8211; Yes, I tried them once. </li>
<li>Brussels&#8217; Sprouts &#8211; I&#8217;ve tried &#8216;em in everything, and still don&#8217;t like &#8216;em. </li>
<li>Beets &#8211; Not even shaved thin.  </li>
<li>Peas  &#8211; Unless their dried, &#8220;wasabi&#8221; peas.</li>
<li>Corn &#8211; Ick, no. But I do like popcorn and Corn Nuts (different flavor and texture!)  </li>
</ul>

<p>Pauleece is a regular in our chat room, and hails from Egypt! He wanted to share with us the top ten foods that you MUST eat if you ever get the chance to visit his homeland. </p>
<ul>
<li><strong>AWANES</strong> This is made of chicken gizzards. When a whole chicken is boiled to make soup, people cut off the Awanes to eat with then number five food I have listed. </li>
<li><strong>ADS</strong> This is an orange legume that is boiled in water, and then drank like a soup. It can also be poured over rice. This is something that is often eaten when someone has to fast. </li>
<li><strong>MOMBAR</strong> There is just no good or easy way to put this. Mombar is the lining of a sheep&#8217;s intestine that is stuffed with rice. It really IS delicious, I promise. </li>
<li><strong>MOLOKHIA</strong> I know this was on the Jordanian list but it&#8217;s ours. This is a plant with large green leaves, and the leaves are cooked with taalya. People drink this as a soup, or pour it over rice. </li>
<li><strong>HAWAWSHEE </strong> This is named after its creator El Sheikh El Hawawshee. It&#8217;s a meat sandwich, but the bread and the meat are cooked together. </li>
<li><strong>KEBDA</strong> This is another name for liver. It&#8217;s cow&#8217;s liver cooked in a special oily sauce that is very spicy. At least 99% of Egyptians love this dish. </li>
<li><strong>SOGO ESKANDARANI</strong> This is Alexandrian sausage, which is a special kind of sausage that is cut into slices. It is then usually cooked with the same sauce as the Kebda. </li>
<li><strong>KOSHARY</strong> Koshary is a mixture of rice, macaroni, fried onions, hummus, tomato sauce and chili. </li>
<li><strong>TAAMYA</strong> This has the same origin as Falafel, but its made from fava beans. Some countries use chickpeas instead. </li>
<li><strong>FOOL</strong> Pretty much all North African and Middle Eastern countries make fun of Egyptians for eating this. Fool is basically just ground Java beans. You can use difference spices. There are probably ten million different Fool recipies floating around Egypt! </li>

<p>Pete is from Norway, and wanted us to know what foods are the best to have from his homeland. Here is a list of some of the yummiest (and hardest to pronounce!) foods from Norway. </p>
<ul>
<li><strong>Raspeball</strong> This is a heavy, but good, dinner that we eat once every other month. It is made of potatoes that are mashed and shaped as balls with meat inside it. Raspeball is served with bacon, sugar, syrup if you want that (I recommend the sugar when you are going to eat it because sirup and Raspeball is blah).</li>
<li><strong>Fårikål</strong> This is a meal that is made of cabbage, lamb, salt and pepper which are all boiled together in a big cooking pot. This is a meal that we eat twice a year, but you can buy it at some restaurants, or at a truck stop whenever you want Fårikål.</li>
<li><strong>Kjøttkaker</strong> This is one of my favorite meals, and we have it every other Sunday. Kjøttkaker is served with potatoes, gravy and lingonberry jam, and you can have other vegetables if you don’t like potato. </li>
<li><strong>Lutefisk is a strange meal.</strong>  They dry fish, and then soak the fish in lye&#8230; then steep it. Serve it with bacon, potato and mustard. We eat this before Christmas, but other times during the year because it so good. </li>
<li><strong>Smalahove</strong> This is a meal we don’t eat anymore here. I have never eaten this, and I’m never going to eat it&#8230; even though it is very popular in Norway. The reason that I’m not going to eat it is that the meat is the sheeps head. When you eat this, you have to start with the ear and the eye and work your way down around the jaw. </li>

<p>See? Here we are, with a second food video tonight. Is anyone else hungry yet? This time, we&#8217;re discussing favorite dishes from Jordan&#8230; and learning how to properly pronounce Flafel. </p>
<ul>
<li><strong>Mansaf (men-sef) or Manasif (men-a-sif)</strong> This is a meal made from dried Yogurt rocks (known as &#8220;Jameed&#8221;), Yellow Rice, and Lamb. The &#8220;Jameed&#8221; is then kept in water for 10 hours to be blended and cooked. After Jameed is cooked, it is called Labaneh. The Labaneh is poured onto rice, and mixed all together. Some people prefer to use chicken, instead of the lamb. </li>
<li><strong>Dawali (Dah-wah-ley) </strong> One of my favorites, Dawali is Grape leaves stuffed with rice and ground beef. Some people even put tomatoes in the leaves.  It is then rolled tightly, and put in a pot for 2 hours to cook. The smell will make your mouth water!</li>
<li><strong>Humus (Hu-mus) </strong> This is one of the most known Arabic meals! This is Chic Peas that are cooked, drained and processed. During the processing, you add Tahine (Tah-heen-eh), Lemon, and garlic. If you prefer, many Jordanians put Hot Pepper on top of the meal! </li>
<li><strong>Flafel (fell-ah-fel) ONE OF THE WORST PRONOUNCED WORD IN THE U.S. (Sorry for Caps.) </strong> This is a patty or ball, which contains spiced Fava Beans. Some Jordanians stuff it with other great things. Falafel has been changed, and now is served as &#8220;Stuffed&#8221; which is larger and has vegetables in it to go along with the spiced Fava Beans! </li>
<li><strong>Mloukhia (mluu-hi-a) </strong> Again, one of my most favorite meals! Mloukhia is like spinach leaves. It is cooked in water, and then put on top of white rice, with some type of meat mixed in. What I prefer, is getting Mloukhia liquid and pouring it on rice, like a rice soup! </li>

<p>Two food lists tonight? Seriously. I need to hire a cook who knows how to make dishes from literally every country there is! I think Ponzi is getting tired of me asking her to do it. Let&#8217;s take a look at some of the top foods from Turkey, sent in by a community member. </p>
<ul>
<li><strong>Dolma</strong> This is probably the most famous dish on the Turkish menu. There are several different types of Dolma. My favorite is made with pepper and leaf. It consists of rice and ground beef, rolled up in vineyard leaves and stuffed into several peppers. </li>
<li><strong>Hünkâr Beĝendi</strong> This is a delicious side dish which contains a mixture of butter, milk, eggplant and cheese. My mouth is watering up just writing about it.</li>
<li><strong>Sish kebab/taouk</strong> This dish I&#8217;m sure everyone has heard of. It is four or five pieces of meat and vegetables barbecued on a single stick. Several dishes are a spin off from this one including Shwoermah and Sultani.</li>
<li><strong>Hirsiz Kebab (thief&#8217;s kebab)</strong> This dish is more of a local specialty in southwest Turkey. A big ceramic pot is heated by surrounding it with hot dirt and burning coal. The pot is then opened, and used like an oven to cook potatoes and sheep or goat meat. If you ever have a chance to eat this dish, I guarantee that you will love it.</li>
<li><strong>Doner</strong> Doner is basically pita bread filled with meat or chicken, lettuce, tomatoes, etc. Most of you know Doner as Sish Taouk sandwich, named such by the Lebanese&#8230; or Souvlaki, named such by the Greeks.</li>
<li><strong>Baklava</strong> Baklava has been the most influential Turkish food. Nothing tastes better than the original Turkish Baklava made of aşki (the layers of the Baklava), nuts, and delicious syrup.</li>

<p>Yaqob is a community member from Saudi Arabia. He saw all of the videos we&#8217;ve put up lately about favorite foods from other countries, and decided to send us his own list! </p>
<ul>
<li><strong>Tammer &#038; Kha&#8217; howa</strong> This is dates (fruit). You eat these and drink Arabic coffee (kha&#8217;how) with it. These traditionally go together because the dates are very sweet, while the coffee is sour. </li>
<li><strong>Foool</strong> This is pronounced the same as the American word &#8216;fool&#8217;. This is milled beans, that are cooked. These are mainly eaten for breakfast, but can be cooked at any meal, really. </li>
<li><strong>Mandi</strong> Mandi is white rice with meat or chicken, cooked in a pot. You dig a hole and start a fire inside, and then you put your pot inside this hole. Cover your meat with Aluminum Foil, and hang it above the pot. Cover this hole, and let it cook for a couple of hours.</li>
<li><strong>Shwoermah</strong> This is a Turkish food, but it is also common in my country since we have a lot of Turkish restaurants here. This is a grilled beef or chicken sandwich, and it is my favorite food.</li>
<li><strong>Al-Kabssa</strong> Al-Kabssa is a rice dish that is cooked with meat, fish or chicken. Add tomato &#038; onion and special spices.  This dish is the most famous food in my country, and in the Gulf in general. </li>

<p>I recently did a video about foods from Scotland. I asked all of you from other countries to send me emails with favorite foods that are native to where you live. Here is one sent in from a viewer in the Philippines!</p>
<ul>
<li><strong>Chicken or Pork Adobo.</strong> We eat this all the time. In our household, it&#8217;s made with garlic,water vinegar, soy sauce, bay leaves and chicken of course. It&#8217;s best with sauce on the rice.</li>
<li><strong>Sinigang.</strong> This is usually made with pork-neck meat bones. It&#8217;s made with green beans, tomatoes, onions, garlic, and kangkong ( river spinach). Another sauce recipe that tastes best with rice and patis is a fish sauce that is usually put on rice patis. It is not the best for it because it contains alot of salt in it.</li>
<li><strong>Lumpia &#038; Pansit</strong> Lumpia is like an egg roll. It usually has pork, carrots, onions, and cabbage rolled up and fried. Pancit is noodles, pork, cabbage, and carrots. We usually only have this when its somebody&#8217;s birthday or something. </li>
<li><strong>Dinaguan (chocolate meat)</strong> This is pork belly with pig&#8217;s blood. I know&#8230;  you got grossed out with the black pudding. This tastes really good, though.  It has a dark-looking sauce which is called chocolate meat. It may sound gross, but it tastes great with rice. </li>
<li><strong>Balut</strong>I have never tried this, but you never know&#8230; you might. It is an egg with the yolk and young chick inside it still. Not all Filpinos eat this. I don&#8217;t think I have the stomach to try it, but I know many people who do eat it. </li>
