I use Audio Hijack Pro on my Mac to record my Skype conversations. A few things to take note of like when you are muting in Skype, the recording doesn’t have you muted, etc.

I use KishKish Skype Answering Machine (SAM) which is free, allows unlimited recording, and is highly configurable, unlike the Pamela trial version and another one I tried.
