I like garlic flavorwise as much as everyone else, but recently I figured out that a skin condition I've had for years (ecsema) and the occasional bad case of heartburn and reflux is due to an allergic reaction to garlic! *gasp!*

Garlic is literally everywhere in the food landscape, and the avoidance of it is quite difficult. But with a calmer tummy, I am relieved to find that out and take preventative steps. Who would think someone would be allergic to something so culinarily wonderful and diverse!?!

I suppose there are worse things to be allergic to.

I make whole wheat bread (no white flour) and add approx. two bulbs of sliced garlic per loaf. Great taste. Much better than the so-called garlic bread sold commercially.

Another great way to use garlic is to roast whole bulbs and when done, peel the cloves and use them as spread on bread.

While fresh garlic is by far the best, in a pinch you can use powdered. Just be sure to have enough liquid to rehydrate the garlic.
